Healthy Vegetarian Meal in Under 20 Minutes!

Healthy Dinner in Less Than 20 Minutes

Like many other families, we stay busy all day long. Sometimes I forget to plan meals
or just lose track of time and at dinner time, realize it’s too late to make whatever
dish I was thinking about cooking. There are a handful of meals that I can prepare in
twenty minutes or less, and the bonus is that they taste good and are healthy!

Pasta & Zucchini

Ingredients

1 Large Zucchini
1 Bag/Box of Pasta
2 Tbsp Olive oil
1-2 tablespoons of minced garlic
Sea salt & black pepper

Directions

While water is boiling for the pasta, wash and slice the zucchini. Heat a large pan
on the stovetop; add 2 tbsp of olive oil and 1-2 tbsp of minced garlic. Cook pasta as
instructed on the package. Add the sliced zucchini into the heated pan and sauté
each side for 3-5 minutes. Remove pasta from heat, drain, and run under cold water.
Serve zucchini slices over pasta.

Yummy additions:

Earth Balance
Parmesan cheese
Black olives
Chickpeas
Nutritional yeast flakes
More veggies
